Crunch Berry Parfait

As Vance & Warren Counties Cooperative Extension collaborates to “Unwind your Mind” beginning in the month of February, one of the very first recipes I, Nitasha Kearney as your EFNEP educator will Whip up for Wellness Wednesday is “Crunchy Berry Parfait.” Berries are loaded with vitamin C, fiber, and antioxidants. It is linked with the memory decline arrest. One study found out that the women who consumed more servings of berries have delayed memory decline by one and half years.

The antioxidants present in the berries help in releasing oxidative stress and inflammation which may result in brain aging and neurodegenerative disorders. Some of the antioxidants in the brain gets stored and improves the communication between the brain cells. The presence of fiber in berries without fats makes it a healthy snack.
